Afghan Ice Cream Recipe (Sheer Yakh or Kulfi)

Afghan ice cream produced by hand is known as sheer yakh. Because of its distinctive flavors, this ice cream is truly exceptional and well worth sampling.

On one of my recent day outings, I discovered a small ice cream stall at the Beverwijk market where two Afghan men were hand-churning Afghan ice cream (Sheer yakh).

Sheer yakh is the Dari word for cold or frozen milk (a variety of the Persian language spoken in Afghanistan)

The same components as Indian kulfi ice cream are used in the delectable traditional Afghan dessert known as sheer yakh, but it is made in a different way.

Just like in the past, it is created by adding milk, sugar, and flavorings to a metal container before placing it into another metal container filled with ice and salt.

The person who creates the ice cream physically holds the ingredients in the stationary, ice-filled container as it is repeatedly rotated. The creamy mixture is then stirred until it freezes. Sheer yakh frequently contains flavorings like cardamom, rose water, and a powder made from wild orchids called salep.

How to Make Afghan Ice Cream (Sheer Yakh)?


The most well-known and wonderful dessert in Afghanistan is Afghan Ice Cream or Sheer Yakh. Sheeryakh is just a simple way to say milk in Dari, even milk.

Ingredient for Sheer Yakh

  • Condensed milk, half a cup
  • 14 cups of dry milk
  • 1 cup milk, full cream
  • 1 teaspoon vanilla
  • A dash of saffron
  • Cardamom 2
  • 1 teaspoon corn starch
  • 12 teaspoon rosewater
  • Pistachios in powder (for garnish)

Directions for Sheer Yakh

  1. On low heat, pour and combine 1 cup of full cream milk, 1/4 cup of dry milk, and 1/2 cup of condensed milk.
  2. Heat the mixture with two cardamon until it is almost boiling.
  3. Add a spoonful of corn starch that has been dissolved in a little water to the mixture. The mixture appears thick as it boils. It’s time to turn the heat down.
  4. Mix well after adding a teaspoon of vanilla and a pinch of saffron.
  5. Place the mixture in the freezer and let it freeze completely, or for about 8 hours.
  6. Sheer Yakh is then topped with a half-teaspoon of rosewater and pistachios.

There are several Sheer Yakh recipes on the internet, but we are confident that the people of the country whose dessert it is will make it the best.
