Ingredients for Recipe

  • 3 sheets of nori (dried seaweed)
  • 1/2 cup sliced ham
  • 1/2 cup thinly sliced cucumber, julienned
  • 1/4 cup thin strips of carrot, julienned
  • 1/4 cup cilantro, finely chopped
  • Spicy Mayonnaise Sauce (see below)
  • 1 tbsp sugar, plus extra for sprinkling
  • 2 tbsp sesame seeds
  • 1 tsp salt
  • 3 large eggs, beaten
  • 450g (1lb) cooked squid, cut into rings and separated (preferably frozen)
  • 25g (1oz) butter, melted and cooled slightly
  • 2 spring onions, sliced finely
  • 1 tsp Shaoxing rice wine or dry sherry
  • 1 tsp sambal Olek paste (available in Asian grocers)
  • 1 handful of coriander leaves, roughly chopped

Directions for Recipe

  1. In a small bowl, mix together the mayonnaise and soy sauce. Set aside.
  2. Place the mayonnaise mixture in a separate small bowl and set aside.
  3. Place 2 sheets of nori on a cutting board and spread one-third of the rice in a line across the top sheet, leaving about 1/4 inch space from edge to edge.
  4. Place another sheet on top and cut into 4 equal squares by cutting along the long side of each square diagonally; then cut each square down the middle into 2 triangles (the pointier end will be on the bottom).
  5. Repeat with remaining sheets and filling ingredients until you have 8 large triangles of rice, cilantro, carrots, and ham; then place on a baking sheet lined with parchment paper or waxed paper.
