- 11/21 pound boneless, skinless chicken breasts
- 1 tablespoon extra-virgin olive oil
- 2 (8 oz.) cans of tomato sauce
- 2 tbsp. white vinegar
- 3 cloves garlic (minced
- 4 tablespoons chili powder
- 1 teaspoon cumin powder
- 2 tablespoons dried oregano
- 12 teaspoons of sugar
- Pepper and salt (to taste)
- Cilantro (lime rice
- 12 teaspoon butter
- 1 cup white long-grain rice
- 2 cup chicken stock
- A quarter teaspoon of salt
- 14 teaspoon black pepper, ground
- 1 lime juice and zest
- 2 tbsp. cilantro, chopped
- 1 tablespoon cumin
- Avocado (Ranch Dressing)
- A quarter cup of ranch dressing
- A quarter cup of buttermilk
- 12 avocados
- 2 teaspoons salt
- 2 tbsp. soured cream
- 2 cups cheddar cheese, shredded
- 6 flour tortillas (10 inches)
Instructions for Recipe
- In a blender, combine the avocado, ranch dressing, buttermilk, salt, and sour cream. Check that the mixture is smooth. Cover and refrigerate as required.
- Heat the oil in a large skillet over medium-high heat. Cook the chicken breasts for 3 minutes on one side, then rotate and cook for another 3 minutes.
- Bring the water to a boil in the tomato sauce mixture. Reduce heat to low and cover for about 20 minutes, or until the chicken is thoroughly cooked (internal temperature of 165°F).
- Place the chicken on a chopping board and shred it with two forks. Cook for another 5 minutes in the same pan with the sauce and chicken.
- In a medium saucepan over medium heat, melt the butter. For 1-2 minutes, stir in the rice. Season the chicken broth with lime, salt, zest, pepper juice, cilantro, and cumin to taste.

- Warm the tortillas in the microwave. Spread a small coating of ranch dressing in the center of the tortillas to prepare them. Place some of the chicken on top of the ranch, followed by some of the rice and cheddar cheese.
- Make sure the tortilla is securely rolled. Continue rolling the burritos until they are all rolled up.
